I was so excited to find this recipe for sweet potato muffins. Sweet potatoes are one of my favorite ascension foods, and one of the few starches you are allowed to have on my eat right for your blood type diet.

If you are an O blood type like me, feel free to swap out the sea salt for iodized table salt, as with O types we always seem to have a low thyroid, and we can really use the added iodine in our diet wherever we can get it. Also note this recipe includes olive oil, another great oil for the O blood types that want to create an ascension plentiful spiritual platform.

Feel free to add another beneficial food for ascension to the mix and for extra flavor, like walnuts, or sesame seeds, or even dried cherries – if you like.

You can buy your sweet potatoes anywhere, however I get mine from Trader Joe’s because they always have a nice bag of organic ones that are a pretty decent price

Sweet Potato Muffins

1 large sweet potato

1/2 cup extra virgin olive oil

1/2 cup almond milk

3/4 cup maple syrup

2 cups rice flour

1 teaspoon baking soda

1 teaspoon baking powder

2 tablespoons cinnamon

1 teaspoon iodized salt (or sea salt, if you prefer)

1 cup dried organic fruit or nuts (cherries or walnuts – optional)

Preheat oven to 400 degrees. Prick sweet potato with fork and bake for an hour until soft. Set aside and cool.

Peel the sweet potato; discard skin and mash into a bowl with a fork. Whisk the olive oil, milk, syrup and vanilla in with potato.
